chore(forgejo): archive le mot de passe admin break-glass au vault + doc (#98) 
- vault_forgejo_admin_password (compte local forgejo-admin, accès de secours)
- doc : note DISABLE_REGISTRATION, section break-glass, su-exec git obligatoire
